Oh, how I love Italian chicken, green beans, and potatoes, for dinner individually! But when you put them together as a “one-pot meal” they are even more amazing!

This is one easy dinner recipe with minimal prep work that the whole family will love! No wonder it’s a mom’s favorite meal! We are always about simple and quick!
Come along as I share one of my favorite meals, plus a few tips and tricks to make it even healthier without sacrificing the taste!
Simple Ingredients
- 5 large Russet potatoes (or red potatoes)
- 2-3 large boneless skinless chicken breasts (thawed or fresh)
- 2 cans of green beans (we prefer Delmonte) but you can use fresh green beans to make it healthier
- 1/2 tablespoon of Italian seasoning
- 1 stick butter or 6 tablespoons of olive oil
- Salt and Black pepper to taste
Alternate Ingredients
- You can switch out the butter and Italian seasoning for half a cup of Olive Garden Italian dressing.
- You can use an Italian dressing packet along with the butter.
- You can use olive oil instead of butter and drizzle 4-6 tablespoons over your entire pan of chicken, potatoes, and green beans.
Kitchen Items Needed
- 9×13 casserole dish
- Foil
Step By Step Directions
Preheat oven to 350
Prep Work:
- Peel and wash potatoes, then cube them up into quarters, or if you are working with larger potatoes cut them into eighths.
- Drain the cans of green beans. If using fresh green beans, make sure to wash, pat dry, cut them into bite-sized pieces, and then they are ready to go.
- Cut the chicken breasts in halves or thirds.
Putting it all together:
- Line one side of the baking dish with green beans, line the middle with the chicken breasts, and line the other side with cubed potatoes.

- Melt 1 stick of butter (or alternative liquid whether: olive oil or Italian dressing) and pour it all over the ingredients. You can also just cut the stick of butter up and lay it on top of your chicken, potatoes, and green beans.
- Sprinkle Italian seasoning all over the entire dish and cover with foil.

Bake:
- Bake at 350 for 1 hour and check. If you feel like your potatoes may need a little longer feel free to add another 5-10 minutes as I have to sometimes.
Easy Italian Chicken, Green Beans, And Potatoes Dinner

This Italian Chicken, Green Beans, and Potatoes Dinner is the perfect one-dish meal for an easy weeknight dinner! This simple recipe requires minimal prep and is healthy and delicious!
Ingredients
- 5 large Russet potatoes (or red potatoes)

- 1/2 tablespoon of Italian seasoning
- 1 stick butter (6 tablespoons of olive oil)
- Salt and Black pepper to taste
Instructions
- Preheat oven to 350
- Peel and wash potatoes and cube them into 4ths or smaller.
- Cut chicken breasts into halves or thirds.
- Drain green beans or for fresh green beans wash and pat dry and cut into bite-sized pieces.
- In a 9x13 baking dish line one side with cubed potatoes.
- Place the chicken down the middle.
- Line the other side of the casserole dish with green beans.
- Pour melted butter all over the entire dish, then sprinkle Italian seasoning over everything and cover with foil.
- Bake at 350 for 1 hour.
- Your one-pot meal is ready to serve.
Notes
Store in an airtight container in the refrigerator for up to 4-5 days.
The potatoes sometimes need additional cooking time. When your hour is up check them with a fork and add 5-10 minutes if they are still too firm.
You can use pads of butter instead of melting it. Just place them strategically around the casserole dish on top of the chicken, potatoes, and green beans.
Additional Information
This Italian chicken potato green bean bake is very easy to customize to how you like it. No matter which way you decide to make it, you will have a delicious weeknight meal every time.
Whether you choose a zesty Italian dressing mix, Olive Garden Italian dressing, or just the simple Italian seasoning, as I do from my pantry, you can’t go wrong. Just remember if you use Italian dressing you do not have to use olive oil or butter!

I love the simple idea! Anyone can make it! I’m not sold on cooking the chicken this way, though. Do you have any alternatives to cook the chicken? Breaded or fried, perhaps?
This is a healthier recipe for us, so I would never use breaded or fried chicken in this recipe. But you could always cook the potatoes and the green beans together in a casserole dish, and cook the chicken separately.
