This homemade potato soup is truly the ultimate recipe to have on hand, and the good thing, it’s easy.
There’s nothing more comforting on a chilly day than a delicious bowl of warm potato soup! But who am I kidding, our whole family loves it any time of year, soup season or not! So whether it be on bitterly cold days or just your average 70-degree day, this ultimate homemade easy potato soup recipe is a favorite comfort food of our family. The last time I made this basic recipe we were scrapping the bottom of the pot because everyone wanted more.

Basic Ingredients
- 1 stick of butter salted or unsalted
- 2 dashes of onion salt (or onion)
- 3 stalks of celery
- 1 cup of bite-sized carrots
- 9 russet potatoes or whatever kind you think are the best potatoes
- Water to be determined as you go
- 3 cups of milk
- 1/2 a block of Velveeta cheese
- Fine sea salt (we use sea salt but you can use regular if you don’t have it) and black pepper to taste
- Crispy bacon (for topping if you like that)
Tools Needed
- Dutch oven or large pot for soup
- Food processor for chopping celery fine
- Knife for cutting veggies
- Potato peeler
- Cutting board
- Crock Pot (if you need it) See notes below.

Making The Best Potato Soup Recipe
- Start with cutting up your carrots and celery into bite-sized pieces
- Put the celery in a food processor to chop super fine
- Peel potatoes and cut into bite-sized chunks
- Put your stick of butter, fine celery, and 2 dashes of onion salt into your Dutch oven or large pot and saute them on medium-high heat.
- Once your butter and celery are sauteed, add in your bite-sized carrots. Barely cover the carrots with water and allow them to cook until almost done where you can stick a fork in it but it’s not mushy. TIP: You do not want to cook them completely because you have to add more ingredients and they will turn to complete mush. So just barely done.
- Then add in your chunks of potatoes and barely cover with water. Cook them until just about done but not mush. TIP: You want to be able to just stick a fork in them and make sure they are soft but not mushy like mashed potatoes.
- Turn your stove down to medium-low heat and add your 1/2 block of Velveeta cheese and your milk stirring continually so the soup doesn’t stick to the bottom until the cheese is melted. Also, be careful to keep the heat low enough so as not to scorch the milk.
- Next, Add some salt and lots of black pepper to taste. TIP: Go easy on the salt because you can always add it later, but you can’t take it away once it’s added. I would only do maybe 1/2 teaspoon or less and allow everyone to add what they need to their bowl of soup later.

The Ultimate Homemade Potato Soup: Easy Recipe
This ultimate homemade potato soup is not only easy to make but also incredibly satisfying. You and your family will love this!
Ingredients
- 1 Stick of butter salted or unsalted
- 2 Dashes of onion salt
- 3 Stalks of celery
- 9 potatoes
- 3 cups of milk
- water to be determined by you
- 1/2 block of Velveeta cheese
- sea salt (or just regular salt)
- black pepper
Instructions
- Cut up carrots and celery into bite-sized pieces.
- Put celery into the food processor and cut it down fine.
- Peel potatoes and cut into bite-sized chunks
- In a Dutch Oven or large soup pot, place 1 stick of butter, 2 dashes of onion salt, and celery and saute' them.
- Next, add carrots barely covered with water, and cook until just done not mushy. Just enough to stick a fork in them.
- Then add your chunks of potatoes, barely cover them with water, and cook on medium heat until you can just stick a fork in it. Do not let them get mushy!
- Finally, add in your 3 cups of milk, Velveeta, salt, and black pepper. (only add a little bit of salt to taste 1/2 teaspoon or less). Make sure to stir continually until the cheese is well incorporated.
- Your soup is ready to serve!
Notes
We prefer leaving ours all day in a slow cooker on warm to allow the flavors to blend better. You can also refrigerate it and serve it the next day which tastes even better. The best part is, whichever you choose, this recipe tastes amazing the first time, the second time, whatever time you eat it.
This soup should last in the fridge for up to 4 days. Ok, let's be honest, I'm not sure how long this soup would last in the fridge because it's hard enough for us to have leftover potato soup, let alone for it to stay in the fridge until it molds. Ha! Ok, that was a joke sort of. But seriously, 3-4 days is the normal recommendation.
Variations
You can use a whole onion for more flavor. Chop it up in the chopper very fine, add the onion to the butter and celery, and saute it with them.
You can add pieces of bacon or bacon bits to the top. We enjoy crispy bacon in ours from time to time.
Add shredded cheddar cheese with your bacon, if you prefer, to the top and make it more like loaded potato soup.
For more flavor, you can cut up a green onion and add it to the top.
