This is a new recipe my family has recently added to our dinner rotation. It’s been a blessing to this mama to have this scrumptious weeknight meal that my kids will actually eat. They are certainly picky eaters.
Come along and I will teach you how to make my chicken bacon alfredo casserole recipe.
Ingredients Needed
- 2 chicken breasts
- 3 cups penne pasta
- 1 cup milk
- 1 cup heavy whipping cream
- 1 tablespoon minced garlic (1/2 tsp of garlic powder for substitute)
- 5 tablespoons butter
- 1 cup grated parmesan romano cheese (or grated parmesan cheese)
- 1.5 cups of mozzarella cheese
- 10 slices bacon, precooked and crumbled
- 1 tablespoon flour
- 1 tablespoon parsley for garnish
- salt and black pepper to taste
- *NOTE: links are not always cheaper but used for references if needed.
Kitchen Tools Needed
- large skillet
- large pot
- strainer
- 9×13 casserole dish
- wooden spoon
- small whisk
- measuring cups and measuring spoons
Directions:
Prep:
- Heat oven to 350 and lightly spray your 9×13 baking dish with cooking spray. If you have a glass dish it should be fine without spray.
- Cut up the chicken into small pieces. (cook bacon at this point, if you don’t have precooked)
Prepare pasta:
- In a large pot, cook penne pasta according to directions. Drain and set aside.
Cooking Chicken:
- Add 2 tablespoons of butter in a large skillet with your chicken. Season it with salt and pepper. Cook at medium heat approximately 5-8 minutes until completely cooked and browned. Set aside.
Making Easy Homemade Alfredo Sauce:
- Using the same skillet, add 3 tablespoons of butter and minced garlic. Brown on medium heat for about 2 minutes until fragrant.
- Next, add flour, whisking until it blends well. This should take around 30 seconds to a minute.
- Pour in milk, heavy whipping cream, and grated parmesan romano cheese. Whisk the whole time allowing it to thicken. Add salt and pepper to taste.
- Take off the heat, add cooked pasta and chicken to the skillet of creamy alfredo sauce. Mix everything together until all pasta and chicken are coated with alfredo sauce.
- Heat your precooked bacon in the microwave, then crumble into small pieces.
- Pour the alfredo pasta sauce mixture into the large casserole dish then top with crispy bacon pieces and 1.5 cups of mozzarella cheese and garnish with 1 tablespoon of parsley.
- Place the cheesy alfredo pasta into your preheated oven for approximately 8 minutes until the cheese is melted. Now, it’s ready to serve.
Easy Chicken Bacon Alfredo Casserole Recipe
This easy chicken bacon alfredo casserole is a comforting dish with its tender chicken, penne pasta, and creamy alfredo sauce. Topped with melty cheese and bacon, it's sure to be a family favorite.
Ingredients
- 2 chicken breasts
- 3 cups penne pasta
- 1 cup milk
- 1 cup heavy whipping cream
- 1 tablespoon minced garlic
- 5 tablespoons butter
- 1 cup grated parmesan romano cheese (or parmesan cheese)
- 1.5 cups of mozzarella cheese
- 10 slices of bacon precooked
- 1 tablespoons of all-purpose flour
- 1 tablespoon parsley for garnishing
- salt and black pepper to taste
Instructions
- Preheat oven to 350 and spray your 9x13 baking dish with cooking spray. If using glass it doesn't need it.
- Cut chicken into bite-sized pieces.
- In a large pot, cook pasta according to directions and set aside
- While cooking your pasta, in a large skillet add 2 TBSP butter and chicken. Cook over medium heat until tender and browned. Approx. 8 minutes. Set aside.
- In the same skillet, add 3 TBSP of butter and minced garlic. Brown on medium heat for approx. 2 minutes until fragrant.
- Add flour whisking until it blends well, 30 seconds to 1 minute.
- Pour in milk, heavy whipping cream, grated parmesan romano cheese. Whisk together allowing it to thicken. Add salt and pepper to taste.
- Take off the heat, add your cooked pasta and chicken to your skillet of creamy alfredo sauce, mix together.
- Heat your precooked bacon in the microwave, crumble into pieces (if you have to cook your bacon do that first before anything else.)
- Pour your alfredo mixture into your large casserole dish. Top with crumbled bacon, mozzarella cheese, and garnish with parsley.
- Place in your preheated oven for approx. 8 min. until the cheese is melted. Ready to serve.
Notes
Place leftover chicken bacon alfredo casserole in an airtight container and place in the fridge. It will last up to a week.
Add time to the melting phase if you want to brown the top of the cheese.
Also, add equal amounts of milk and heavy whipping cream if you want a little more sauce. (1/4 cup to 1/4 cup) If you do this add another TBSP of flour.
Variations and Additional Thoughts
- Cook your chicken in 1-2 TBSP of olive oil instead of butter if you want to use less butter.
- Use precooked canned shredded chicken instead of cooking chicken to save time.
- Spray aluminum foil with cooking spray and cover when baking, therefore holding in some moisture but it will add cook time.
- Use 1/2 tsp of garlic powder if you do not have minced garlic.
