Chicken chowder soup is the ultimate fall comfort food. As the temperatures start to fall, there’s nothing better than a bowl of chicken chowder to warm you up. Have you been wondering how to make it, but can’t find the perfect recipe? Likewise, I was there at one point.
It all started at a charming fall fundraiser dinner one beautiful autumn evening. I was introduced to what I thought was the very best chicken chowder out there, and I left wondering what their secret recipe was. I asked them, but of course they kept it a secret.
Thereafter, I was determined to recreate that amazing soup. Surprisingly, it took me awhile to figure it out. Maybe a couple of years. In any case, I continued experimenting with all different variations of this recipe, tweaking ingredients and seasonings. The results? I’ve finally cracked the code and perfected a recipe that not only tastes amazing, but according to my family, surpasses that unforgettable chowder from years ago.

Ingredients
- 1 stick of butter
- 1 dash of garlic salt
- 1 dash of onion salt
- 1.5 teaspoon pepper
- 1.5 teaspoon salt
- 1.5 teaspoon parsley
- 4 cups of chicken broth
- 2.5 cups of water
- 1 cup milk
- 1/4 cup flour
- 1 cup of carrots
- 3 stalks of celery
- 10 potatoes
- 1/2 block of Velveeta cheese
- 2 cooked chicken breasts (depends on how hearty you want it you can always add more of take some away)
- 1 can of cream of chicken soup
How To Make Chicken Chowder
Before starting the process of making the soup, I put two frozen chicken breasts in an Instant pot with 1 can of cream of chicken soup and a half cup of water. With it being frozen, it takes close to 45 min to cook. You can do this however you like. If it’s thawed, obviously it will go faster. You can even cook the chicken in the oven while you’re working on the soup if you do not have an Instant pot.
The Steps To Making Chicken Chowder
Prep 1: Cut up veggies. Wash and peel potatoes. Make sure to cut carrots into bite size pieces and potatoes as well. Cut up 1/2 block of Velveeta cheese into cubes.
Prep 2: Put the cut pieces of celery into a food processor to make it really fine.
- 1: In a large pot or dutch oven, sauté the butter and the celery together.
- 2: Add in carrots and barely cover them with part of the chicken broth. Cook until they are almost tender, enough to stick a fork in.
- also add in pepper, salt, onion salt, garlic salt, parsley
- 3: Add potatoes and barley cover with chicken broth. Cook until they are barely done. Do NOT over cook or they will get mushy because you still have more ingredients to add.
- 4: Add 1/4 cup of flour to your 1 cup of milk and whisk until well blended. Then pour and stir into your soup. This will help thicken it.
- add the rest of your chicken broth if there is any left
- add 2 cups of water
- add your cooked chicken (shredded into small pieces with fork)
- add the liquid from your Instant pot (which was the water and cream of chicken and any chicken juice)
- add Velveeta and stir all of this together. Simmer for about 5-10 minutes. Once the cheese is melted, and blended in well, it’s ready to serve. Grab some crackers and enjoy!
Chicken Chowder
This is the most delicious chicken chowder you will find. It's creamy goodness will be the perfect cozy comfort food for the colder seasons.
Ingredients

- 10 potatoes cubed into bite size pieces
- 1/2 block of Velveeta cheese
- 2 cooked chicken breasts
- 1 can of cream of chicken soup

Notes
If you make this in the morning and put in a crock pot on warm, all the flavors will be well blended by that night.
Make ahead (and refrigerate) two days before a party and it will be sure to taste extra amazing.
You can make and serve right away and it will still be very good.
Tips and Extra thoughts
1: The very best way to have this soup is two days later. I know that sounds crazy because it’s so stinking good immediately, but it’s utterly amazing if you cook it ahead of time. It allows the flavors to blend for a day or two in the fridge. If I’m going to take it to a party, I will make it at least two days ahead of time.
2: This chicken chowder is also really good if you make it in the morning and transfer everything to a crockpot. Keep the crock pot on the warm setting all day long. It also allows the flavors to blend a lot better.
3. This recipe is perfect for your family, parties, or any other kind of get together. Also, if you’re looking to help someone on the mend, this soup is perfect to share because it lasts several days and still taste amazing.
